How to make buffalo chicken dip stuffed mini peppers

  1. Make the buffalo chicken dip – use this recipe to make the best buffalo chicken dip you’ve ever had in your life
  2. Prep the peppers – clean the peppers, cut them in half length-wise, and remove all the seeds. Keeping the stems attached is optional, but they make for a great built-in handle for holding the pepper. 
  3. Stuff the peppers – add 1-2 tablespoons of the dip into each of the pepper halves. Make sure to press down and fill all the nooks and crannies of the pepper. Top with shredded cheese.
  4. Bake – the peppers can technically be enjoyed once they’re stuffed, but to add a lovely roasted flavor and melt the cheese, bake for 10-15 minutes in a 375º F oven.
  5. Enjoy! These peppers can be eaten by themselves, dipped in ranch or sour cream, and garnished with lime, jalapenos, or green onions.

Ingredients

  • 1-2 cups prepared buffalo chicken dip recipe linked above and below
  • 12 sweet mini peppers sliced in half, seeds removed
  • 8 oz. shredded pepperjack or cheddar cheese

Instructions

  • Preheat the oven to 375º F. Prepare buffalo chicken dip, following the instructions in the linked recipe. Line a baking sheet with parchment paper.
  • Let the dip cool for 5-10 minutes. Then add 1-2 tablespoons of the dip each of the pepper halves, depending on the size of the pepper. Top each with shredded cheese. Bake for 10-15 minutes or until the cheese has melted and browned a little.
