Preheat oven to 350º F. Line a baking sheet with parchment paper. Spread pecans across the baking sheet in a single layer. Bake for 10-15 minutes or until your kitchen begins to smell of pecan (or whatever nuts you’re using). Remove from oven and set aside to cool. Turn oven down to 300º F.
In a large mixing bowl, combine oats, cooled nuts, cinnamon, and salt. Then fold in oil, honey, and vanilla extract. Stir until everything is well combined and coated in the honey/oil mixture. Pour onto the prepared baking sheet and spread it into a single, even sheet of granola.
Bake for 10-15 minutes then stir to make sure everything bakes evenly. For larger chunks of granola, use a spatula to turn the granola then use the spatula to press the granola back into a single even layer. Continue baking for 10 more minutes or until the granola is a deep golden brown.
Optional: zest a lemon over the sheet of granola as it cools.
Break granola into pieces and store in an airtight container or ziplock bag.
Notes
Pecans can be substituted for any other nut you like, sunflower seeds, or even dried fruits/raisins
Zesting with lemon as the granola cools is optional, but it adds a nice pop of citrus
